"There are seven."
"What the hell are the other two?"
"Magic and Luck."

As a wine merchant, and someone qualified by the Ontario Wine Board to do guided tastings, I am able to discuss umami, and its impacts on taste and smell quite thoroughly.
And yet, I remain unconvinced.
